- 1 1/2cups prepared reduced-sodium roasted red pepper and tomato soup (such as Pacific Natural)
- 1 thawed veggie burger, chopped
- 1/2cup chopped kale
- 1/4cup chopped tomato
- 2tablespoons chopped red onion
- 2tablespoons thinly sliced artichoke hearts in oil
- 1tablespoon feta
- 1tablespoon sliced black olives
- Directions
Combine soup, veggie burger, kale, tomato, onion and artichoke hearts. Simmer over medium heat until onion is tender, about 10 minutes. Top with feta and olives.
