Low Fat Vegetarian Sloppy Joes

Low fat, vegetarian version of the american classic. Put on top of your favorite bread or buns with or without slaw.

Ingredients:

  • Lentils, 1 cup dry
  • Organic Textured Soy Protein, 1 cup dry
  • Tomato Paste, 6 oz
  • Cumin, 2 tsp
  • Chili powder, 2 tsp
  • Salt, 1/3 tsp (or according to your personal salt preference)
  • Black Pepper, 1/2 tsp (or according to your personal preference)
  • Green Peppers 1/2 cup, chopped
  • Onions, raw, 1/2 cup, chopped
  • Carrots, 1/2 cup, chopped
  • Cane Sugar, 2 tsp
  • Garlic, 2 cloves, diced
  • Rice Vinegar, 1 tsp (optional)
  • 2 cups water

Instructions:

  1. Bring a pot of water to a boil, add lentils and carrots and simmer for about 30-60 min(or until lentils are tender). Drain. Mix Lentils and carrots with all other ingredients in a big pot and stir together. Cook on low for 20-30 min, or until most of the excess liquid has evaporated. Stir occasionally while it is cooking
