I used to eat soy sausage patties for breakfast all the time. I can’t find any I like here in the UK, so I came up with my own and they taste great!
Ingredients:
- 1 Cup water
- 1 Vegetable stock cube
- 1/3 tsp ground thyme
- 1/3 tsp ground sage
- 1/4 tsp Onion powder
- 1/4 tsp Garlic Powder
- 1/4 tsp Ground oregano
- 1/4 tsp Ground basil
- 1 Cup dry textured vegetable protein (TVP)
- 2 Medium eggs
- 1/4 Cup bread crumbs
- 1 Tbsp Vegetable oil
Instructions:
- Add stock cube and spices to water, bring to boil. Add TVP. Remove from heat, stir well, and allow to cool enough to mix with eggs, about 15 mins. Beat egg and add to TVP mixture along with bread crumbs.
- Let mixture sit for 5 mins. Form patties (extra may be frozen). Fry up (about 3 minutes per side, till nicely browned) and enjoy! Patties will be soft, so turn gently.
